Easy to make breakfast bars that take less than 20 minutes to make!

Homemade breakfast bars are so easy to make and much more nutritious and delicious than the ones I’ve bought previously in shops.  These breakfast bars are tasty, healthy and made only using natural sugars and fruits.  The sweetness of the bananas, cranberries and honey coupled with the chewy texture from the oats makes for one delicious breakfast bar.

These are easy to make and can be made in batches and then either kept in the fridge or freezer.  If you’re freezing them, get them out the evening before so they have chance to thaw through before the following morning.

These are handy to take to work or grab when you’re on the school run and they’re ideal to snack on throughout the day too.  Enjoy!


2 very ripe bananas

200 g rolled oats

100ml almond or soya milk

2 table spoons of cashew or olive oil butter

1 tablespoon ground cinnamon

1 tablespoon vanilla powder

Small handful of dried cranberries

Coconut oil for the dish


Makes 8-10 (dependant on size of dish)


Preheat the oven to 180 oc (fan 160 oc)

Weigh all the ingredients and then pour into one bowl, leaving the coconut oil to grease the dish only.

Cut up the dried cranberries into small pieces.

Mash the bananas with a fork until smooth and place in a bowl with the rest of the ingredients and give this a good stir.

Oil a baking tin or dish with the coconut oil and then spoon in the mixture.

Bake for 12 minutes, then leave to cool before taking out of the dish and then cut into bars or squares (whichever you prefer).


Top tip: Always use very ripe bananas as this is key for the sweetness and consistency.
